Typical sheep's cheese
Slovakian food tends to be marked by rustic simplicity.
A typical food is 'bryndza', a sheep's cheese,
which has been around for as long as 200 years.
The European Union has even granted it a protected
designation of origin and it can now only be exported
from Slovakia. This cheese also forms the basis
for the Slovakian national dish - 'bryndzove halusky'
(dumplings with bryndza).
Bryndzove halusky (dumplings with bryndza)
Ingredients (Serves 4):
750 g potatoes
2 eggs
300 g plain flour
salt
250 g bryndza (or other sheep's cheese)
100 g bacon
a little butter
Method:
- Peel, wash and grate the potatoes. Add the
eggs, flour and a little salt, and work into
a moist dough. Add a little water to moisten
if necessary.
- Bring a large saucepan of generously salted
water to the boil.
- Rinse a wooden board with cold water and spread
the potato dough onto it, scrape small amounts
of it off and slide these dumplings directly
into the boiling water. When they rise to the
surface, remove with a skimmer.
- Crumble the sheep's cheese into small pieces
and mix in the finished dumplings. Keep warm.
- Cut the bacon into strips, brown in a frying
pan, adding a little butter if desired.
- Serve the dumplings with the crispy bacon
strips.
