Fish, fruit and vegetables
Fish, fruit and vegetables are the main ingredients
of Portuguese cuisine. One of the national dishes
is 'bacalhau' - dried cod - which is usually eaten
with potatoes and fresh vegetables, and sometimes
also with chickpeas. Portuguese salad traditionally
consists of lettuce, tomatoes, onions, vinegar,
olive oil and a little salt. There are also many
variations on chicken, including 'frango na púcara',
which is a chicken cooked in a pot, and 'cabidela',
chicken cooked in its own blood with rice. Fruit
is often served for dessert.
Bacalhau a bras (cod with potato sticks)
Ingredients (Serves 4):
500 g bacalhau (dried, salted cod)
4 eggs
black pepper
500 g potatoes (peeled and cut into sticks)
1 clove garlic
5 tbsp olive oil
4 onions (thinly sliced)
2 tbsp chopped parsley
Method:
- Cut the fish into pieces, place in cold water
and leave in the refrigerator overnight. Pour
the water away and break the fish into even
smaller pieces.
- Add black pepper to the eggs and whisk.
- Brown the potato sticks and the peeled garlic
clove in olive oil.
- Remove the potatoes and then brown the onion
slices.
- Mix the fish and the potato sticks and cook
together until well done. Add the eggs and mix
carefully but thoroughly.
- Sprinkle with the onions and parsley to serve.
