More than just cheese
Typical dishes include herring, smoked eel, pea soup and 'hutspot' (a hotpot of mashed potatoes with carrots and onions), and one typical snack is fried potatoes. Sweet snacks such as cakes, 'stroopwafels' (waffles with syrup) and 'poffertjes' (a kind of light pancake) are also popular. And, of course, the Netherlands are famous for their many varieties of cheese.

Marinated matie herring
Ingredients (Serves 4):
1 litre water
3 bay leaves
6 juniper berries
6 peppercorns
? litre white wine vinegar
4 butterfly fillets of matie herring
1 onion

Method:

  • Add the bay leaves, juniper berries and peppercorns to the water and bring to the boil. Leave to cool and mix in the vinegar.
  • Peel and slice the onion.
  • Remove the tail fin from each butterfly fillet. Place the herring fillets and sliced onion in a porcelain pot, pour the vinegar stock on top, cover with clingfilm and leave to marinate for at least 3 days in the refrigerator.
  • Serve with bread, or boiled potatoes in their skins.
