Rustic and solid
The typical cuisine of Luxembourg is rustic, and
solid to match. Examples are 'kniddelen' (flour
dumplings), 'bouneschlupp' (a vegetable stew made
with fresh beans) and 'kachkéis', a cheese
with a soft, syrupy consistency that is found
only in Luxembourg.
Bouneschlupp (bean soup)
Ingredients (Serves 4):
1 onion
2 cloves garlic
500 g green beans
500 g potatoes
100 g celeriac
1 carrot
a little butter
1 litre water
1 vegetable stock cube
4 bay leaves
1 large pinch grated nutmeg
black pepper
½ tsp salt
125 ml single cream
Method:
- Peel the onion and the garlic, cut into small
cubes and set aside.
- Wash, prepare and chop the beans. Peel, wash
and dice the potatoes, celeriac and carrot,
and add to the beans.
- Heat the butter, add the diced garlic and
onion, and braise lightly.
- First add the water, then the mixture of potatoes,
beans and other vegetables, plus the stock cube,
bay leaves, nutmeg, salt and black pepper, and
stir. Simmer for 30 minutes over a low heat.
- Take the pan off the heat, add the cream and
serve.
