Fish and milk
Typical Estonian foods are fish and milk - typical
dishes are milk soup with fish, 'rosolje' - herring
and potato salad with beetroot - fish bake, Baltic
herring, steamed or in bacon sauce, and 'pirukad'
- pasty filled with meat and vegetables.
Milk soup with fish
Ingredients (Serves 4-6):
1¼ litres water
1½ kg cod fillet
500 g potatoes
1 parsley root
1 onion
salt
1 tbsp plain flour
1 litre milk
2 tbsp butter
1 tbsp finely chopped dill
Method:
- Bring the water to the boil, add the clean
fish, simmer for 10 minutes and then take it
out again.
- Peel the potatoes and parsley root and cut
into pieces, and peel and dice the onion. Add
to the fish stock, season with salt and simmer
for 15 minutes.
- Whisk the flour with the milk and pour into
the soup. Bring to the boil and simmer until
the vegetables are cooked.
- Cut the fish into bite-sized pieces and return
to the soup for heating. Add the butter and
dill and take the soup off the heat. Leave to
stand for a short while before serving.
