Home of French fries
Belgium is regarded as the country that invented
'French' fries. You can buy these deep-fried potato
sticks on every corner - on their own, with a
variety of sauces or in a hollowed-out baguette.
But the Belgians also have a sweet tooth. The
snack of hot, sweet waffles topped with whipped
cream or icing sugar can be found everywhere.
Boterkletskoppen (butter biscuits)
Ingredients:
100 g butter
125 g brown sugar
1 sachet vanilla sugar
1 tbsp water
125 g flour
1½ tbsp chopped hazelnuts
1½ tbsp chopped almonds
60 g flaked almonds
- Method:
Mix together the butter, sugar, vanilla sugar
and water.
Blend with a hand mixer for 3 minutes.
- Gradually stir in the flour. Finally, mix
in the chopped hazelnuts and chopped almonds.
- Shape the dough into rolls 1.5 cm in diameter,
cover, and leave to rest in the refrigerator
overnight.
- Lightly dry-roast the flaked almonds and leave
to cool.
- Cut the dough rolls into 3 mm slices. Lay
the slices on a baking tray lined with baking
parchment roughly 4 cm apart, flatten and sprinkle
with flaked almonds.
- Bake the biscuits in a preheated oven at 175ºC
for about 4 minutes.
- After baking, remove the hot biscuits from
the baking tray immediately and leave to cool.
